Caswell were engaged to provide specialist HVAC products and services to the privately-owned and operated Ethan’s Japanese Steakhouse & Teppanyaki restaurant in Lincoln.

Although very much a one-off project (notwithstanding its ‘twin’ restaurant, the Rib & Steak restaurant Damon’s) it gets a special mention due to the specific challenges posed – and solutions created – to handle the inherent hazards when flamboyantly cooking Teppanyaki cuisine in a public dining space.
The bespoke stainless-steel canopies were designed and manufactured for the chef stations and installed directly above each individual ‘cooking stone island’.
They not only needed to be extremely effective in removing the extensive smoke, steam, airborne oil and fat particles within a tight zone but also provide a signature ornamental design element to the restaurant dining space. This was successfully achieved by allying the highly-polished bevelled Stainless-Steel frames with illuminated, coloured translucent panels.
