Bombay-inspired restaurant group, Dishoom pride themselves providing their discerning diners with culinary delights in a comfortable, retro Bombay-inspired ambience.

Caswell were pleased to have been selected to ensure that this vision was delivered in their restaurants, including their Covent Garden flagship in the heart of London’s West End.

Indicative of the tight brief which Dishoom prescribe, we were tasked with providing a durable, energy-efficient solution within an existing footprint which adhered to all the stringent local planning conditions and constraints.

Specifically, they wanted air-conditioning throughout; including the kitchen, where it needed to be able to combat the extremely high temperatures generated in the cooking process. We installed a VRF (Variable Refrigerant Flow) system which circulates only the minimum amount of refrigerant needed during a single heating or cooling period. This mechanism allows Dishoom to independently control several A/C zones.

Social responsibility and planning laws combined to further extend noise mitigation measures, both during the refurbishment and to future-proof the restricted riser spaces with attenuation and insulation for when the restaurant became operational.
